Formerly located on Scheels Dr., in Sparks, NV, CBQ was a family-friendly casual dining restaurant and bar know for authentic Kansas City and Texas style barbecue that’s all about protein – baby back ribs, pulled pork, beef ribs, wild salmon, grilled sausages and southwest offerings. Live music enhances the entertainment experience. When it comes to good barbeque, slowing down is essential to being authentic. With Kansas City and Texas style serving as the roadmap, center cut brisket and ribs are brought down to room temperature to maximize tenderness, then massaged with a homemade dry rub of sugars, chilies, annatto seed and a few other fixings. Whole chickens and turkey breasts are soaked in brine for 24 hours. Meats are smoked up to eight hours over hickory wood, which burns slower and provides a touch of sweetness with a fresh hickory flavor. If that’s not enough, add a choice of four homemade sauces– Cowboy BBQ, Spicy BBQ, Carolina Mustard and Sweet Baby Mike’s.
