As Chief Operating Officer of Trifecta Management Group, Tony Penn has day-to-day responsibility and oversight for the Company’s operations. Tony is also involved with new concept development and roll-outs, partner relations and business development.
Tony Penn has 25+ years of experience in the restaurant industry, most recently of The Counter, a newly developed Gourmet Burger restaurant, where he headed up operations, creating the start-up’s operational and training systems and leading the team that opened five restaurants in 2007.
From 1997 to 2005, Tony worked for Buca di Beppo, most recently as Senior Vice President of Operations, responsible for the Western United States openings and operations. Tony joined Buca di Beppo in 1997 as the General Manager/Partner of the Encino, California restaurant, opening and running what at that time was one of the most successful Buca di Beppo’s ever. His efforts were soon rewarded in 1999 when he was promoted to Divisional Vice President, where he was responsible for 15 Buca di Beppo’s, located in Southern California, Las Vegas, and Hawaii. In 2004, he was promoted to Senior VP of Operations, where he was responsible for over 42 restaurants in the Western United States. Prior to Buca, Tony was a managing partner with Outback Steakhouse, opening the first Outback in California. He also served for 7 years as General Manager and Director of Operations for Carlos Murphy’s responsible for 4 different concepts in six different states, and was General Manager for Chi Chi’s Mexican Restaurants.
Tony holds a Bachelor of Arts degree from San Diego State University. He is the father of two children and resides in Playa del Rey, California.
